Method of selection : Parcel selection based on vine age and vineyard condition.
Vinification : Traditional vinification with rack-and-return (délestage). Long maceration (3 to 4 weeks).
Yield : 30–40 hl/ha
Alcohol content : 14%
Ageing & Packaging : Ageing on fine lees in stainless steel tanks in an insulated, temperature-controlled cellar.
Tasting notes : Very beautiful deep colour.
Nose of macerated black fruits, with notes of morello cherry and Burlat cherry.
The palate is ample and generous, showing very good balance, with notes of mocha, chocolate, black pepper spices and clove.
A very fine finish marked by freshness and complexity, with macerated fruit notes and very good persistence.
