Method of selection : Parcel selection based on vine age and vineyard condition.

Vinification : Whole-bunch carbonic maceration with a long maceration period of 4 to 5 weeks.

Yield : 30–40 hl/ha

Alcohol content : 14.5%

Ageing & Packaging : Ageing on fine lees in stainless steel tanks in an insulated, temperature-controlled cellar.

Tasting notes : Beautiful intense colour.
The nose reveals small red fruits, with complex and spicy garrigue notes, and hints of tapenade.
The palate is well balanced, with sweet spices, notes of sour cherries, fruit in brandy, and touches of caramel, dark chocolate and Sichuan pepper spice.
The finish is rich, silky and persistent.
